I keep reading conflicting information on the internet about mushrooms. Many sites say they are high in purines but many sites also say that they don't negatively affect uric acid levels or trigger gout. Are mushrooms safe on a gout diet?
Same question for beans.

Purines are not the main issue in gout. Purines are in the genetic material (DNA and RNA), so all vegetable cells have purines, yet vegetables do not cause gout because they are low in iron and high in magnesium. Many mushrooms have a high copper/iron, which can even be helpful in gout.
The main issue in gout is the iron and molybdenum excess and the low copper and magnesium in your body. This is why you didn't have gout as a young man but eventually got it, even though you probably ate more purines as a young man. If you eliminate the excess iron and molybdenum through periodic blood donation until your ferritin is between 30 and 55 (it is probably over 150 now) and if you take 2 mg/d copper (GNC), 200 mg/d magnesium as citrate and 800 IU/d vit D you will be able to eat everything in moderation, except organ meats and including a unit of alcohol per day, which is actually good for you (it is a powerful antioxidant, relaxant, etc, the problem is that people often drink more than one unit).
